Symplax lasagna

Our grocery store just started carrying a range of pastas made out of things like lentils and green peas! We tried lasagna noodles made out of green lentils and green peas in this recipe.

Preheat oven to 400F. Start and end the layering with a layer of marinara sauce. Layer sauce, lasagna noodles and filling over and over in a square or rectangular pan. Filling could be veggies (like diced bell pepper, tomato and lots of onion) and cheese. Or in another version, we used about 3 cups of spinach pureed with some ricotta and lots of garlic (this one was the best, pictured below). Cook in oven for 45 min. Top with crushed red pepper for serving. Delightful! With symplax noodles, there is no need to boil the noodles beforehand, one step meal :)
