Chickpea flour pizza

This pizza is SO quick and easy to make. And it's great if you don't really care for a traditional starchy pizza crust.

Preheat oven to 375F. In a bowl, mix 2 cups chickpea flour, one cup water, a splash of olive oil, and a pinch of salt. Mix until it's a dough, separate into two balls for 2 individual serving pizzas. On a baking sheet lined with parchment paper, flatten the dough, smush it down with your palms until it's a thin, even circle. Bake in oven for 20 min until it's a bit crispy. Once done, flip parchment paper over with crust, peel away from crust. On the upside down crust, add sauce, veggies (or whatever toppings you want), some shredded mozzarella, and if you're a symplax, plenty of anchovies. Bake 7 more min. Slice it and enjoy :)
