Shakshuka

In a hot pan with some olive oil, cook generous chopped red onion and bell pepper. Once soft, add lots of minced garlic and cook for a couple of minutes until fragrant. Put in some chopped tomatoes and add spices (generous cumin and chilli powder, some paprika, some salt and pepper). Add some liquid (splash of water or broth) and let it cook for about 10 more min until tomato mixture is thick. Add a couple of dollops of sour cream or some crumbled feta for some creaminess. Make two little holes and crack an egg into each. Cover pan and cook about 3 minutes, whites should be solidified and yellows should be soft and runny. Top with chopped cilantro or green onion, as well as some chopped chilles.
