Catfish and greens

Put some catfish in an uncovered hot pan (no oil needed, catfish is pretty fatty). If frozen, can go in pan right from freezer. Let it cook for about 5 min. Once it has released some juices, put a bunch of kale in there, some soy sauce and vinegar (rice vinegar, apple cider vinegar, whatever you please). Cover and let it cook for about 10 min more. Kale will reduce and catfish should be cooked. Top with fresh chilles. Pictured below is catfish and greens, grilled mangoes and fresh tomatoes. Texture of catfish is quite unique. Firm and a little gelatinous, fairly fatty. One of Payel's faves.
