Benji's favorite rice bowls

Start a pot of brown rice. Meanwhile, stir fry lots of mushrooms, garlic and onion in a pan with some olive oil. Add a handful of finely chopped mint towards the end. On another pan, cook strips of turkey bacon until crispy (2 per person). Chop the bacon into chunks once cooked. Finely dice some lankas (one per person). Once rice is cooked, mix with veggie mix and turkey bacon chunks. Salt. Serve with Banda's famous lemon pickle.
