Benji's favorite fish cakes

Preheat oven to 400F, start cooking a pound of salmon (or trout) on the stove. Dice about a third of a large red bell pepper, a third of a red onion, and a couple of fat cloves of garlic, sautee that with olive oil until soft. Add the cooked flaked fish, take off heat. Add 1/3 cup corn meal, 1/3 cup full fat greek yogurt. Add whatever spices you want (sambar spices are excellent) and salt. Form tightly into 8-10 patties, slightly flattened onto baking tray. Bake 8 min, flip, bake 8-10 min more. While baking, make sauce. In blender, put 1 bunch thoroughly washed cilantro, a couple of hot chille peppers, generous lime juice, salt, some full fat greek yogurt. Serve with extra sliced chilles or hot sauce, as well as the crispy fish skin from the fish fillet. Arugula goes well as salad green.
