Symplax original :) If you cook a whole chicken, put the drippings in a bowl in the fridge. The fat will rise to the top and solidify, while the collagen-rich broth will turn into a jelly consistency.
Put the chicken butter on one piece of bread, and the jelly on the other. Put chunks of leftover cold chicken in there, along with spring onions and chilles. Madras curry powder is also excellent! Salt and pepper.
