Springy soy stir fry

I use Nutrella soy balls. They're really springy in texture and have a nice bite to them. Also, the're porous, so they soak up flavor really well.
Rehydrate dried Nutrella chunks by pouring hot water over them and leaving them to sit for 15 min or as long as you want. Squeeze out the excess water when you're done, this is important!
In a hot pan, put sesame oil, minced garlic, ginger, and lots of red onion. After stirring that around for a couple of minutes, put in the Nutrella balls. Add generous fish sauce, a splash of vinegar (rice vinegar or red wine vinegar are both great) and a little turmeric. Can also add in other veggies, like chopped bell pepper. Cook until soy chunks are nicely browned and onions are soft.
