Benji's special eggy pancakes

This recipe started when I wanted to make a half batch of pancakes, but only needed 1 egg in the full batch. I just kept one egg in the half batch, and the eggyness of the resulting pancakes is delightful!

I cook up the batter on a griddle on low medium heat. It takes a little bit longer, but you'll love the golden brown goodness! You can use the bubbles coming up as a "flip indicator". A lot of bubbles means that you can flip without making a mess.

For about 2-3 pancakes, so scale up the batter as you like:

Mix 1/4 cup full fat Greek yogurt
3/4 cup flour
3/4 teaspoon baking powder
1/8 teaspoon baking soda
1/4 teaspoon salt
1 egg
3/8 cup whole milk
1 tablespoon of sugar
