Roasted veggies

This is a super simple and delicious way to prepare many veggies. Below are some of our faves. 
First preheat oven to 450 °F. Wash and dry veggies (dry well so they get crisp). Toss with some fat (we use ghee because of its high smoke point) and salt/spices. 

Okra: takes about 15 min at 450F. A little crisp on the outside, still a little gooey on the inside :)
Onions: takes about 25 min at 450F. These get so sweet! So good.
