Larb

In a wok, stir fry generous garlic, ginger and shallots (or onion). Add ground meat (1 lb is generous portion for two), chopped chilles, chopped veggies like carrots and celery, fish sauce, soy sauce, chopped spring onions, and a generous chopped handful of cilantro and of fresh mint (key ingredient). Cook until water from meat and veggies is evaporated. Squeeze lime on top. Serve in lettuce wraps.

Vinesha made a version with shredded tofu instead of meat, added chopped peanuts too. Can try that.
