Pan fritata

Makes a great quick fritata for one. In a bowl, put 2 eggs and one egg white (the extra egg white helps fluff the fritata), chopped up veggies (bell pepper and onion are great), salt, pepper, any other spices you want. Beat really well until frothy. In a hot wok (small area at the bottom makes it collect there, keeps shape small instead of really thin and spread out), heat a little olive oil, pour frothy egg mixture in there and cover pan. While it's cooking, mix some sour cream, minced green onion, garlic powder and any spices you want (jerk seasoning is really good). After egg has cooked a couple of min, uncover, flip, cook about a minute more. Top with chopped chilles or dry chilli flakes and spiced sour cream.

Pro tip: use a rehydrated egg white (from egg white powder). Less waste, and you don't have to separate an egg.
