Ben's specialty guac: Mix avocados with a little garlic powder, a little lime, salt and diced shallots (pictured below).
Payel's Indian guac: My mum's recipe. In a little oil, fry mustard seeds, chopped green chilles, generous hing, a couple of broken dried red chilles. Once seeds start popping, dump that mix over avocados. Add salt. Mix.
Pro tip: if your avocados are hard, wrap each one individually in foil and bake at 250 degrees F for 10-20 minutes. We had pretty hard avocados once, and it softened about half of them enough to make guac!
