This is the basic recipe for a creamy hot pepper sauce. Blend some hot peppers (couple of big poblanos, some fresnos etc). Something with lots of flavor but not overwhelming spice is good so you can put in a good volume of peppers without making the sauce inedibly spicy. Add a couple of spoons of sour cream and a little salt. Can add any other spices/flavors you wish, but that is the basic formula. We love this on fish. Below is a poblano sauce over flounder.
