Benji's famous chicken wings
Ben invented this method to make chicken wings that were at once fall-off-the-bone tender as well as crispy on the outside. Slow cook chicken wings with a little butter and hot sauce (whatever you have on hand, we usually use multiple ones), low 8 hours or high 4 hours. Then carefully lay them on a baking tray (they're a little hard to keep together at this stage) and sprinkle with a little baking powder. Bake at 350 degrees F for about 15 min. The baking soda is the secret ingredient for crispy wings. While wings are baking, on the stove, make a sauce out of tomato paste, butter and hot sauce(s). Whisk sauce while pouring over wings, serve hot.
