Saag Paneer

This is my mum's recipe. I like to start with blocks of frozen spinach, saves so much time! Thaw a couple of blocks of frozen spinach. Throw in some chopped tomatoes. Puree this until smooth ish. In another pan in some oil, fry chopped ginger, garlic, cumin seeds, red onion. Once the onions are soft, put into the spinach-tomato mixture. Add ground cumin, ground coriander, chilles, chille powder, garam masala and salt. Optionally, add turmeric and/or hing. Chop paneer into cubes and stir fry them  a bit in the onion pan, and then put the cubes into your spinach mix. Garnish with cilantro and serve.
Option: for a lighter curry, use extra firm tofu or tempeh instead of paneer. In this version, can throw in a dollop of sour cream to make it a bit creamy.
If you coordinate everything well, ends up taking about 20 minutes of active cooking time, not bad!
