This is a super simple recipe, just our take on classic breaded fish. Wild perch with the skin on is awesome for this. Crush up a whole grain ryvita cracker per fillet. Defrost the fish if frozen. Beat an egg and mix in any spices you want. Coat the fish in egg, then ryvita crumbs. Cook in a heated skilled with a little oil (unrefined coconut oil is our favorite) for about 5 min on each side. Serve with a dollop of sour cream and a squeeze of lemon :)
